Sullivans Cove Single Cask French Oak Second-Fill

French Oak Second Fill Single Cask TD0455 was distilled in November 2013 and decanted in December 2024, after maturing for 11 years in a single 300L French oak ex-tawny cask. This cask had previously been filled with an earlier batch of Sullivans Cove Single Malt Whisky. Bottled unflocked and unfiltered at 48.1% ABV, this cask yielded only 496 bottles.

The French oak second-fill casks boast a history as rich as their flavour. Initially used as first-fill ex-tawny casks for an earlier batch of Sullivans Cove single malt, the best casks are then selected for a second round of maturation. This approach beautifully showcases the rich character of the French oak, while allowing the distinctive spirit of Sullivans Cove to take centre stage.

This whisky offers a rich, complex flavor profile shaped by its aging in second-fill French oak. It builds in intensity, with brine and anise notes that highlight the depth of the Sullivans Cove character.
